Date Fudge Truffles

Ingredients:
10-20 medjool dates, pitted
1 TBSP-1/4 cup coconut sugar (for rolling)-place in a small, deep dish
Directions:
Plaace dates in a food processor and process until "date batter" forms (dates will be molded/formed together). If dates are dry, use tiny bit of water when processing to get them to stick. Take a chunk of date batter out with *clean* hands and roll into a bite size ball. Once date ball is formed, place into a small cup/bowl/ container of coconut sugar and roll around until all surfaces of the date ball are covered in a fine layer of coconut sugar. Place finished date ball onto a plate/platter/container. Finish rolling date balls until all the date batter is used up. Once completed, serve as is, or place date fudge balls in the freezer for 1-2 hours for a chilled, chewy treat! Date fudge balls are great eaten by themselves, served with fresh fruit, or on top of banana ice cream! Store left-over date fudge balls in refrigerator or freezer for later use.

Cookie Dough Nice Cream

Ingredients:
2-4 frozen bananas, chunks (break bananas apart prior to freezing)
3-4 medjool dates, pitted
1 tbsp coconut sugar
Directions:
Process frozen bananas in food processor until majority of banana chunks are blended and smooth. Add in pitted medjool dates and coconut sugar and process until all banana chunks are blended and smooth. Serve in a giant bowl and enjoy!

Cinnamon Raisin Date Rolls

Ingredients:
15 medjool dates, pitted
1/2 cup raisins
1/4 cup coconut sugar (for rolling)-place in a small, deep dish
1/2 tsp cinnamon (optional)
Directions:
In a food processor, combine dates, raisins, and cinnamon. Process all ingredients until a date-raisin dough ball forms in the processor. Once dough ball is formed, break into chunks and re-process so that all ingredients are evenly combined. Tear off a piece of the dough ball and roll into a small, round ball with your hands (about inch wide). Place cinnamon raisin-date ball in the dish of coconut sugar and toss/roll until all surfaces are evenly coated with the sugar. Set aside finished date-raisin roll onto a plate or flat surfaced container. Repeat until all of date-raisin dough ball batter is used up. Serve as is or refrigerate/freeze for a cool treat!
