Homemade Salsa

Ingredients:

1 can diced (no salt) tomatoes
1/4 to 1/2 red onion, diced
1 jalapeno pepper 
1 tbsp cumin
1 tsp garlic powder (optional)

Directions:

Combine all ingredients into a food processor.  Pulse process until all ingredients are mixed, but not pureed.  Serve as is with veggie crudites or your favorite Mexican dish, or chill for later!

Dates-on-a-Log

Ingredients:

10 (pitted) medjool dates
5 celery sticks

Directions:

Prep celery and pit medjool dates, splitting the dates in half, lengthwise.  Smoosh 4 medjool dates halves into center of celery stalk.  Repeat until all ingredients used up!  This is one of my favorite snacks and kids love too!

RLT's (rice cake, lettuce, tomato)

Ingredients:

1-2 packets (7-14) plain rice cakes (no salt or low sodium)
1/4-1/2 head ice berg lettuce, separated into sandwich size sheets
1 whole ripe slicing tomato, cut into slices

Directions:


Starting with a rice cake, layer 1 lettuce sheet on the rice cake and top with a tomato slice.  Repeat until all ingredients used up!
